Eating while camping doesn’t have to mean hotdogs and baked beans every day. We love to eat well while we are camping and when you are hiking all day, it’s a good idea to eat well and healthy. Not to mention hiking, and being outside all day, can really build up one’s appetite!

Before heading out on any camping trip I always prepare several portions of bannock mix. If you check online you will find plenty of recipes for a variety of types and flavours of bannocks. Our main recipe that we prepare is a whole wheat version. Great for italian meals, lunches and anytime you need a bread side dish.

Above you can see our basic whole wheat bannock with shredded cheese on it. We usually cook the bannock in a cast iron pan either over the fire, Whisperlite stove or, in this case, the trailer stove.

One of our favourite and easy meals over the fire is par-boiled potatoes, corn and some form of meat. The easiest meats to use are hot dogs, turkey dogs or sausages.

Place all of the ingredients in tinfoil, in a tinfoil pan or in a cast iron pan. Add butter, fresh or powdered garlic, spices, onions, salt and pepper. Cook until it is heated through and, if you’re lucky, nicely browned.

If you have leftovers, it even tastes good cold the next day for lunch!

This time we used the vegetable noodles to get the extra nutrition and flavour. Put a slice of bread, or bannock, with it and you have a meal. If you want a side salad, we recommend either romaine lettuce, or spinach. Both of these greens last longer than regular iceberg lettuce and you can make a variety of dressings to go with them.
