A super easy meal to make while camping is quesadillas. We have made these over the campfire and with a campstove. I prefer to use a cast iron pan or grill to get a really good crispy outside but there are lots of ways you could make these.
Quesadillas can be as simple as tortillas and cheese, or as complicated as using multiple ingredients of your choice. At Chutes Provincial Park we were using fresh mushrooms, canned smoked red peppers and leftover chicken from a previous meal. We had whole wheat tortillas on hand and a bag of shredded cheese.
Cut up your ingredients, then I usually add some cheese first to the bottom tortilla, then I scatter the ingredients, followed by another layer of shredded cheese. Cover all that with another tortilla. Now, if you want them to be crispy, make sure the pan is hot before you place them and you should add a light coating of oil to make sure they don’t stick. After you have placed the tortilla in the pan you will probably need to either reduce the heat or remove the pan from direct heat. You want them to be crispy, not burnt, unless that’s the way you want them.
Watch them closely and be ready to carefully flip them once the one side is golden brown. Once down, cut them in half and enjoy. Really easy and very delicious. The main thing to consider is that unless you have a large cooking area, you may have to make these one at a time, so if you have a lot of hungry mouths to feed you might want to have two people making them, or realize that everyone won’t be sitting down to eat together.
You can also do these on a piece of tin foil (or even wrapped in tin foil) on the campfire grill. That’s one way to cook more at a time and to get that full camping feel.
