Eating a delicious meal, cooked over a campfire, after a day of hiking is the best part of camping. During one of the evenings at Charleston Lake Provincial Park we put together a fantastic meal of turkey burgers, roasted vegetables and sweet potato fries.
Prepare your ingredients while the fire is warming up and be sure to preheat the pan with oil in it. Get the sweet potatoes into the cast iron frying pan well before the vegetables since they will take much longer to cook. Season them with salt, pepper and other spices of your choice, we also added minced garlic.
Cut up a variety of vegetables into sizes that will cook evenly. You can then oil and season the vegetables and either cook them in a wire basket like we did, or on tin foil on the fire pit grate. There are many other methods to cooking vegetables over a campfire, comment below how you prefer to do it.
After the sweet potatoes are partially cooked, add the burgers and vegetables to the fire. Keep an eye on everything, flip the sweet potatoes, meat and vegetables when necessary until cooked. The meat should be cooked through, the vegetables and potatoes should be soft and tender.
Pour your favourite beverage and enjoy your meal by the fire, you earned it.
